Fresh Tomato and Vegetable Sauce
Health Benefit: This meal is filled with tons of fiber and can be added to any protein to create a well-rounded, healthy and filling meal!
Medium skillet/pan or pot
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 carrot, chopped
- 1 pepper, chopped
- 2 zucchini, chopped
- 1 tbsp olive oil
- 3 large tomatoes, chopped
- 4 tbsp water
Step by Step Instructions
Heat a skillet over medium heat with olive oil; add onions and saute about 5 minutes; add carrots, peppers, zucchini, and garlic; saute another 5 minutes
Add tomatoes and water and cover; let the mixture simmer for 20 minutes
Uncover pot and let some of the liquid evaporate to thicken sauce
Serve over your favorite grain and enjoy!
